The peaberry cherry undergoes meticulous hand-harvesting and fermentation, followed by drying on raised beds lined with parchment for 14-20 days, culminating in a curated period of 2-3 months. Peaberry beans, a rarity in coffee, result from singular pollination, creating a unique small rounded bean compared to the more common flat-sided ones.
